We’re always looking for a quick and easy breakfast solution for our kids and ourselves. These ham and cheese egg bites are incredibly easy to make and you can eat them on the go. The best part is you can make these with just about anything you like! Veggies, bacon, or just eggs with cheese! I’ve made these egg bites exactly as the recipe describes, but when I know I’ll be eating breakfast on the go, I scramble the egg to make it less messy.
The Ingredients
- Cooking spray, for pan
- 12 slices ham
- 1 c. shredded cheddar
- 12 large eggs
- Kosher salt
- Freshly ground black pepper
- Chopped fresh parsley, for garnish
The Recipe for a Simple Egg Bite Breakfast
Start by preheating the oven to 400 degrees, and spray cooking spray in your muffin tins!
Line each cup with a slice of ham and sprinkle in some cheddar cheese, or whatever cheese you prefer!
Crack an egg into each ham cup and season as you’d like. Scramble it if you’d like, or leave it as is!
Bake for about 11-15 minutes, depending on how you like your eggs done! Sprinkle the fresh parsley on top prior to serving, or fresh chopped chives (my personal preference.)
