I had been searching for the perfect egg salad recipe for quite some time. When I stumbled upon this Love & Lemons’ recipe, I knew I had to try it. Egg salad is the best snack to have in your fridge. Add it to a sandwich, throw it in a tortilla, or scoop it with some crackers.
The recipe requires simple ingredients that I had on hand: eggs, mayo, dijon mustard, lemon juice, scallions, dill, salt, and pepper. You literally can’t mess it up!
Ingredients
- Boiled eggs (8 large eggs)
- Mayonnaise (1/4 cup)
- Dijon mustard (1 tablespoon)
- Fresh lemon juice (1 tablespoon)
- Scallions (2 thinly sliced)
- Fresh dill (1 tablespoon chopped)
- Salt and pepper, to taste
Steps
- Boil the eggs: I placed 8 large eggs in a pot of boiling water for 10 minutes. After boiling them, I rinsed them with cold water and peeled them.
- Make the dressing: In a small bowl, I mixed 1/4 cup of mayo, 1 tablespoon of Dijon mustard, and 1 tablespoon of fresh lemon juice.
- Combine everything: I chopped the eggs into small pieces and added them to the dressing. Next, I added 2 thinly sliced scallions and 1 tablespoon of chopped fresh dill. I mixed everything together until well combined.
- Season to taste: I added a pinch of salt and pepper, tasted it, and adjusted the seasoning as needed.
Pro Tips
Add some bacon or avocado to this egg salad! This salad is SO good on top of a piece of toast with avocado smear onto it. Along with a few slices of crispy bacon, a gourmet breakfast sandwich is in your future.
If you want to add a little bit of spice, some red pepper flakes will go perfectly in this recipe! You can even finely chop up some jalapenos if you need some real heat.
