It has been absolutely freezing this week, and I needed something to warm up the entire family! Spinach and Artichoke dip is one of my kids favorites appetizers whenever we go out to eat, so why not make it into an easy and delicious winter soup? Check out this recipe for Chicken Spinach Artichoke Soup! You can find it through that link at Delish, but I’ve also summarized everything for you below!
Recipe
- Heat up your oil in a large pot, over low-medium, heat. Add the onion and celery, and cook down until it’s pretty soft! Add you garlic and some red pepper flakes for some added heat, and let that cook for only about a minute or two, as garlic burns quickly. Then, add the chicken broth and lemon juice and bring all of it to a slow boil.
- Next, add the chicken breasts (you can also use dark meat for added flavor) and lower heat a nice simmer. Your house will smell absolutely amazing at this point, and everyone will get hungry. Make sure to cook the chicken all the way through, which usually takes 10 to 12 minutes.
- Scoop that chicken out from the pot and shred it up. Use a couple forks! Replace the chicken back into the pot, then add artichoke hearts, mozzarella, parmesan, and cream. Make sure everything gets nice and melted and then stir in the spinach. You can serve the soup immediately after this. For a garnish, add a little lemon zest and as much parmesan as you want (which for me, is A LOT). Enjoy!

- 1 tbsp. extra-virgin olive oil
- 1/2 yellow onion, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1/2 tsp. red pepper flakes
- Kosher salt
- Freshly ground black pepper
- 6 c. chicken broth
- Juice of 1/2 lemon
- 1 1/4 lb. boneless skinless chicken breasts (about 3 large breasts)
- 1 (14-oz) can artichoke hearts, drained and quartered
- 1 c. shredded mozzarella
- 1 c. freshly grated parmesan, plus more for garnish
- 2 tbsp. heavy cream (optional)
- 4 c. fresh spinach
- 2 tbsp. freshly chopped parsley, for garnish
