Hello there, fellow busy moms! We all know the hustle and bustle of motherhood can sometimes make meal preparation quite a challenge. But fear not! I’ve found five simple, fast, and absolutely mouth-watering lunch recipes perfect for those chaotic days. Trust me, your kids (and your schedule) will thank you!
1. Veggie Quesadillas
We’re kicking things off with these colorful Veggie Quesadillas that are not just nutritious, but also a treat for the eyes and the palate! Packed full of fresh veggies, they’re a great way to sneak in those greens. Inspo for this came from Everyday Delicious, but I changed a few things around!
Ingredients
- 4 large flour tortillas
- 2 cups shredded cheese (your choice)
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 onion, diced
- Olive oil
Steps
- Heat a pan and add a bit of olive oil.
- Sauté the veggies until they are tender.
- Lay out a tortilla, spread a layer of cheese, then add the sautéed veggies and top it with another layer of cheese and a second tortilla.
- Cook on a griddle or a pan until the tortilla is golden and the cheese is melted.
- Cut into wedges and serve hot!
2. Greek Pasta Salad
This Greek Pasta Salad is a vibrant and refreshing option that’s perfect for those warmer days when you’re craving something light yet satisfying. Inspo comes from Dinner at the Zoo!
Ingredients
- 8 oz pasta (bowtie or fusilli)
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 cup Kalamata olives, pitted
- 1/2 cup feta cheese, crumbled
- 1/4 cup red onion, finely diced
- For the dressing: olive oil, lemon juice, dried oregano, salt and pepper
Steps
- Cook the pasta according to package instructions, then drain and let cool.
- While the pasta is cooling, prep your veggies and make the dressing by whisking together olive oil, lemon juice, oregano, salt, and pepper.
- In a large bowl, combine the cooled pasta, veggies, feta, and dressing. Toss until everything is well coated.
3. Egg Salad Sandwich
Up next, we have the classic Egg Salad Sandwich. It’s protein-rich, creamy, and simple to whip up. A timeless and versatile choice for any lunch. Check it out the full recipe, here!
Ingredients
- 6 eggs
- 1/3 cup mayonnaise
- 1 teaspoon mustard
- Salt and pepper
- Bread of your choice
Steps
- Hard-boil the eggs, peel them, and chop them up.
- In a bowl, combine the chopped eggs with the mayonnaise, mustard, salt, and pepper.
- Slather the egg mixture onto your favorite bread and you’ve got yourself a tasty sandwich.

4. Honey BBQ Chicken Wraps
Our fourth recipe, BBQ Chicken Wraps, brings a bit of smoky-sweet tanginess to your lunch. They’re absolutely delicious! The original recipe calls for popcorn chicken, but I swapped out for shredded chicken instead!
Ingredients
- 2 cups cooked chicken, shredded
- 1/2 cup BBQ sauce
- 1/4 cup honey
- 2 cups broccoli slaw
- 1/2 cup shredded cheese
- 4 large flour tortillas
Steps
- In a bowl, mix the cooked chicken, honey, and BBQ sauce.
- Lay out your tortilla, then add a layer of broccoli slaw (you can use shredded lettuce), the BBQ chicken, and a sprinkle of cheese.
- Roll up the tortilla tightly, slice in half, and serve.
5. Tuna and Avocado Salad
Last but certainly not least, we have a Tuna and Avocado Salad. This high-protein, heart-healthy option takes no time to assemble and is perfect for a quick lunch. The original recipe can be found, here!
Ingredients
- 1 can of tuna, drained
- 1 ripe avocado, cubed
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1 tbs dijon mustard
- optional: cucumber or celery
- Lemon juice, olive oil, salt and pepper to taste
Steps
- In a bowl, flake the tuna and add the avocado, tomatoes, and onion.
- Drizzle with lemon juice, olive oil, salt, and pepper. Mix until well combined.
